Chicken Casserole and Dumplings

If you fancy a really hearty and comforting classic, try making our Chicken Casserole with Dumplings. It’s made from tender pieces of chicken breast braised in rich savoury gravy, with a medley of carrots, swede and sliced leeks and served with dumplings.

Instructions

  1. Heat oil in a pan. Add the onion, swede, leek and carrot, stir and fry gently for 2 minutes
  2. Add the garlic, tomato puree and salt and stir to combine
  3. Add the chicken stock and simmer for 5 minutes
  4. Add the chicken and poach gently for a couple of minutes
  5. In a mixing bowl combine the suet, flour and water to form a dough and roll into balls
  6. Spoon the casserole mix into a earthenware bowl and top with the dumplings
  7. Cook in the oven for 25-30 minutes

  • Low Fat Vegetarian Suet
